I moved house! This is the best news for cakes generally as the kitchen in the new house is GLORIOUS. Spacious and clean and organised. What a dream. AND I got Nigella Lawson How To Be A Domestic Goddess for Christmas (thanks Mum!). Things are looking good.
In celebration I'm upping the ante.

A truly royal affair.
Nigella makes this in a food processor, but its super easy sans processor as well.
And man it looks pretty.
This cake is not only a celebration of a new year and a new house but also made with a particular cake lady in mind who told me Victoria sponge was her absolute fave. Can you get Victoria Sponge en EspaƱa?
225g unsalted butter
225g caster sugar
1 tsp vanilla
4 large eggs
200g self raising flour
25g cornflour
3-4 Tbsp milk
75mls fresh cream
Fruit jam
Fresh fruit
Preheat oven to 180degreesC. Cream butter and sugar (I used my brand new electric beater for this - thanks Granny!). Add vanilla. Beat in eggs one by one with a spoonful of flour between each. Ditch the beater for a spatula and fold in the remaining flour and cornflour. Add milk as you fold.
Put batter into two 20cm tins and bake for 25mins or until cake tester clean and top golden.
Leave to cool completely and then whip fresh cream.
Smother one half of the cake in jam (I used raspberry) and then place sliced berries on top of that (strawberries in my case) then dollop on the whipped cream. Then place the second sponge on top. Boy oh boy does it look impressive. Dust with icing sugar. YUM
Gotta love the artfully placed strawberries. Got that cake stand for my birthday from some lovely friends. I like it so much.
