I actually made this cake on Tuesday. Again - I'm not cut out for the real world. Used the fun table cloth again. Its just so fun.
Recipe courtesy of Nigella. She is such a chocolate goddess.
200g plain flour
250g sugar
1/2 teaspoon baking soda
1 large egg
125 mls buttermilk (I didn't have this so just used normal milk - no idea if that is actually a legitimate alternative, but the cake didn't seem to complain.)
125g butter
2 Tbsp cocoa powder
175mls Coca Cola
Put the Coke, the cocoa and butter in a pan and gently heat until melted. Sift dry ingredients together in a separate bowl and add to butter/coke mix. Whisk in milk and egg. Pour into 20cmish tin and bake for 40 minutes at 180 degrees.
Actually I left it in for 50 minutes and it still wasn't quite cooked, but this could also have been because of some very questionable measuring on my part. It was a weeee bit gooey in the middle but I was assured by the willing eaters that this was not a problem. Lucky. For the icing I used less than a 1/4 cup of coke and a Tbsp of cocoa and then lots of icing sugar. You can't really taste the Coke in the cake or the icing, but it does make it taste curiously delicious. The eaters said they wouldn't have guessed that curious flavour was coke. It was very yummy even if it was a bit gooey. And the pretty colourful things on top helped too I think; courtesy of mum. What a lovely care package that was.

This is one of my favourite cakes, especially as it's just melt and mix and you're practically done.
